Lusteninovy hummus | Legume hummus

Ingredients

  • 5 spoons Sprouted green pea crunchy flakes
  • 3 spoons Sprouted red lentil crunchy flakesy
  • 3 spoons Sprouted chickpea crunchy flakes
  • 1 spoons Tahini (a slightly diluted sesame paste made from crushed sesame seeds and sea salt)
  • 1 clove of garlic
  • 2 teaspoon olive oil
  • lemon juice
  • salt
  • pepper
  • pinch of dried chili
  • If you have zucchini available, you can substitute it with some sprouted ingredient. The hummus will then be more tender.

Procedure

  1. Place all the sprouted legume flakes in a bowl and pour 150 ml of hot water over them. Let them swell for about 10 minutes.
  2. Meanwhile, peel the garlic, put all the ingredients except the spices and a few peas and lentils in a blender and blend until the consistency of a coarse puree. Season with spices and pour into a bowl.
  3. Garnish with spring onions, parsley or chopped nuts. Serve as a spread on sandwiches or as a dip for vegetable sticks.
